Everyone has a baleboste in their family whose brisket is legendary and whose rules are absolute. From Hebrew Baal Bayit. The head of the house or the person in charge of the house. Baal bait is masculine so yiddish makes fun of it by tuning it into a feminine form BALEBOST. Masculine yiddish is Balebos. The TE at the end makes it feminine.
